Delicious lunchbox recipes
OATIES 1 1 cups flour 1 cup quick cooking oats 1 tsp. cinnamon 1 tsp. baking soda 1 tsp. salt 3 egg whites or 1 cup egg Substitutes 1 cup packed brown sugar 1 cup sugar 1 cup applesauce 1 cup margarine (softened) 1 tsp. vanilla HEAT oven to 325 degrees F. Spray cookie sheet with nonstick cooking spray.
Mix flour, oats, cinnamon, baking soda and salt. Set aside. Beat egg whites in large bowl on medium speed until foamy. Add sugars applesauce, margarine and vanilla. Beat on medium speed until smooth. Add flour mixture. Drop by tablespoonfuls 2'' apart onto cookie sheet, flatten slightly.
Bake 12-15 minutes of until light brown. Cool slightly, remove from cookie sheet. Cool on wire rack. Makes 3 dozen cookies.
PITA BREAD WITH SPICY TUNA FILLING 1 onion chopped 3 cloves garlic crushed 1 tbsp. oil 1 small stick cinnamon 1 whole clove 1 tsp. chili powder 1 tsp. Oregano 4 oz. can tomato paste 1 cup water 2 x 3 oz. cans tuna drained 2 large pita breads, halved 4 lettuce leaves, shredded PLACE onion and oil in glass dish. Microwave on 100% (Full) power, 2-3 minutes, stirring once. Add all spices. Microwave 1 more minute on 100% (Full) power. Combine tomato paste and hot water, blend carefully.
Microwave on 100% (Full) power 2-3 minutes until heated through. Remove cinnamon stick. Form pocket in each pita bread half, fill with mixture and lettuce. Makes 4 halves.

LUNCH BOX HERO 1 cup margarine or butter 2 tsp. prepared mustard French rolls Sliced luncheon meat Sliced processed Swiss cheese Lettuce leaves Take out: measuring cup, small bowl, measuring spoons, spoon, knife and table knife.
Method 1. Allow butter to stand at room temperature to soften. Put softened butter in a small bowl. Add mustard to butter. Blend butter and mustard together. 2. Cut French rolls in half lengthwise. Spread each half with some of the butter mixture. Save the rest to use on other sandwiches. 3. Layer meat, cheese and lettuce between roll halves. If you are taking the sandwich in a lunch box, carry the lettuce separately in a plastic bag. Add lettuce before eating.
