Hunt Club brings together professional staff from Bermuda, UK, Switzerland and

When the Hunt Club Tavern opened on May 19 the owners and staff came prepared with professional experience in the food service business. Owner Mr. Richard K. Butz had early beginnings in the food service. At the age of 13 he began working part time in his uncle's bakery in New York. He worked there until he graduated from high school. After high school he joined the United States Navy Seabees and was stationed in Bermuda. Mr. Butz married Ms Antoinette Lightbourn and worked at various trades and services. He was a grocery manager and managing director for A1 and worked at Gibbons Company for 12 years. He began Butz construction company which he successfully ran for 12 years until he sold it. Bored with his semi retirement Mr. Butz picked up the Hunt Club project in 1994. His son Steel Butz , also an owner, played an important part by broking the deal for the Hunt Club Tavern on behalf of his father and Mr.

Hassell. Mr. Butz Jr. is a broker for Leonard Gibbons Real Estate Limited by day and sometimes moonlights as a bar tender at the Tavern. Mrs. Butz, wife of Richard Butz and also an owner, did the accounting for the project leaving the building to her husband. General Manager Mr. Donald Hassell comes to The Hunt Club with more then 20 years of experience. He started his career at the age of 12 as a pot washer at Henry VIII Pub & Restaurant in Southampton. Mr.

Hassell attended Bermuda Hotel School and took a two-year college course. He worked at Henry VIII for 14 years, spending seven years in the kitchen and seven years in the dining room. He became a resident manager and stayed at Henry VIII until 1988. In 1989 Mr. Hassell started at the Somerset Country Squire and still operates it. He created Flanagan's Irish Pub & Restaurant in 1990 and was the general manager until 1994, a year after he sold out of the establishment. Head Chef Julius Nigg comes to the Tavern with 29 years of experience. He received his training in Switzerland and began working in Bermuda in 1967 at the Harmony Hall where he was the party chef. He later took over from the head chef there. Then in 1971 he went to work at the old Penthouse Club where he stayed until 1974 when he returned to Switzerland to further his education. He returned to Bermuda in 1984 and worked at the Lobster Pot for five years as the party chef. Mr. Nigg then worked at Port o' Call for a year as the Sous Chef. Then for three years he was the head chef at Loyalty Inn. Since March 16 he has been the Head Chef for the Hunt Club Tavern. He says that so far everything is running smoothly. He is using cornstarch instead of Flour and olive oil instead of other kinds of oil to have a tasty menu that is low in fat. Waitress Miss Michelle King worked on the Norwegian Cruise Line before she came to the Hunt Club Tavern. She also worked on other cruise lines and Five Star Establishments in London, England.

Miss King received her degree in hotel and catering management from Dorset University. Maitre 'd Mr. Roman Fenz , hails from Austria, where he was educated, and was last working at Chancery Wine Bar in Hamilton. PHOTO THE MANOR ROOM -- The Manor Room is the main dining area in the Hunt Club Tavern.

THE COACH ROOM -- The Coach Room is adjacent to the Manor Room and can be used for private functions.
