Princess recruits French pastry chef
The Fairmont Hamilton Princess has signed up a new pastry chef.
Frenchman Kevin Pannier specialises in combining science with the culinary arts to create unique dishes and he will be responsible for overseeing the dessert menu at 1609, the Crown & Anchor and catering throughout the hotel.
Mr Pannier is currently working to create a mango berry and chocolate ‘caviar’ using a blend of chemistry, physics and chef skills.
The hotel’s executive chef Thomas Laberer said: “The Hamilton Princess and Beach Club has become a gourmet destination in Bermuda among visitors and the local community.
“With the addition of Chef Pannier to our team, diners are in for a culinary treat. Our new weekend buffets are feasts for the palate and the eyes.”
Mr Pannier will introduce this weekend two new buffets to the Crown & Anchor, one featuring scones on Saturdays and the other, on Sundays, featuring a strawberry theme.
Mr Pannier, who worked at the Ritz Carlton Moscow before moving to Bermuda, trained in Perpignan and Paris.
