New executive chef at Hamilton Princess
A new executive chef has been appointed at Hamilton Princess & Beach Club.
South African Thomas Laberer will oversee the 1609 Bar & Restaurant, Crown & Anchor, Marcus’ and the beach club as well as catering throughout the hotel.
Mr Laberer is a highly experienced chef, serving as an executive chef at various five-star hotels and resorts around the world. He started his career in 1988 as chef de partie fine dining, working in France, Italy, Switzerland and Britain.
He has worked as executive chef at the Anatara Resorts in the Maldives, the Kempinski Hotel Beijing Lufthansa Centre, the Leela resorts in Mumbai and Bangalore, the Hilton Singapore and Hilton Shanghai Hotel, and The Westin Grand Cape Town and The Table Bay Hotel, both in South Africa.

Mr Laberer earned his certified master chef’s degree at IHK Munich. He also completed a three-year apprenticeship at the Grand-Hotel Nuremberg (formerly The Rocco Forte Collection) and culinary training under the head chef at Aubergine Restaurant, a Michelin three-star restaurant in Munich.
