New cookbook charts meatless, milkless way
Those seeking delicious vegetarian food that is also dairy free, will want to check out the new cookbook `CalciYum'.
This unusual 192-page compilation, which will be available at the Phoenix Centre's Bookmart, also boasts a Bermuda connection -- its publisher resided on the Island for a number of years.
Toronto-based publisher Chris Traber lived on the Island for three year and his wife, Sheryl was a founding member of the Bermuda Vegetarian Society.
"Our daughter Paige was even born in Bermuda in 1993,'' Mr. Traber added. "I have a tremendous affinity for Bermuda.'' And the authors of the book, Rachelle and David Bronfman became engaged to each other during one of their many visits to the Island.
The writing duo produced an assortment of healthy fare for the cookbook, including sections on dips and spreads, desserts, pasta and beverages.
In addition to 16 pages of full-colour photos, the book boasts nutritional notes on calcium and information on the bone disease, osteoporosis.
"It's a one of a kind book,'' Mr. Traber explained. "It was published in July and the response has been exceptional.
"It has received wonderful endorsements from the medical community. It is applicable to all those who want to eat well and decrease or eliminate dairy and fat-based foods.'' `CalciYum' features 120 dairy-free, calcium rich, vegetarian recipes sure to please even the most discriminating palate -- kids.
"The recipes have all been child tested,'' Mr. Traber pointed out.
He also said that the recipes were especially well suited for pregnant and nursing mothers, those who are allergic to dairy products and anyone who is lactose intolerant.
"A lot of people are lactose intolerant,'' he said. "A great many people of Asian, Middle Eastern or African descent have trouble digesting the lactose in dairy food.
"This book is also great for cultures who do not want to include meat in their diets or those who cannot mix meat and dairy products together, like the Jewish community.''
