Getting egg rolls all wrapped up!
(Choon Guen) 1 lb. barbecued pork or cooked chicken or ham 2 stalks celery 2 green onions 1 can (15 oz.) whole winter bamboo shoots 1 lb. fresh mushrooms 1 lb. bean sprouts 1 tsp. salt 1 tsp. sugar 1 tsp. thin soy sauce 11 tbsp. oyster sauce 1 pkge. (1 lb.) egg roll skins* 1 qt. oil for deep frying *Recipe calls for very thin egg rolls skins. Carefully separate and loosely restack skins before filling.
Sealing Mixture 1 tbsp. all-purpose flour, mixed with 2 tbsp. cold water CUT pork, chicken or ham, celery, onions and bamboo shoots into thin julienne strips about 1 inch long. (The bamboo shoots should measure 3 cup). Place in a bowl. Thinly slice mushrooms and add with bean sprouts to bowl containing other ingredients. Mix well. Just before forming the egg rolls (see method below), add salt, sugar, soy sauce and oyster sauce to meat and vegetables.
Mix well. Using about 2 rounded tbsp. filling per egg roll, wrap and seal egg rolls, following directions in accompanying diagram. Heat oil in wok to 325 0 F. Deep-fry egg rolls, about 8 at a time, for 3 minutes on each side (6 minutes total cooking time). Remove from oil and drain on paper towels. Serve hot.
Advance preparation: Rolls may be formed up to 2 hours in advance and stored in a closed container at room temperature. Separate layers with waxed paper to prevent them from sticking together. (Egg rolls stacked this way may be frozen and then transferred to plastic bags and placed in freezer for up to two months; deep fry without defrosting). They may also be deep fried several hours in advance, then placed in an uncovered pan and reheated in a pre-heated 375 0F. oven for 10 minutes.
HOW TO WRAP AN EGG ROLL 1. Place the skin with one corner pointing toward you. Place about 2 tsp.
filling about 2'' in from the corner.
2. Fold the corner nearest you over to just cover the filling.
3. Fold over again bout 1 1 '' (you should now have a triangle), leaving at least 2 1 '' at the top, as shown.
4. Fold the right and then the left corners toward the centre, like an envelope; the "package'' should be about 4'' long.
5. Roll tightly from the aside nearest you to form a cylinder.
6. Moisten the open corner with sealing mixture. Fold it toward you, pressing firmly.
