Gluten-free, dairy-free Christmas cake

Well there is nothing like a Christmas list from a toddler to put some Oh No in your Ho Ho. After several days of contemplation, Chloe asked for a pony and a magic lamp. And not just a pretend magic lamp. One with a genie. And wishes. In equally optimistic form, the Lovely Husband asked for a shed and $10 million. Perhaps he wants to keep the $10 million in the shed? Maybe we could keep the pony in the shed? At least that would solve one problem. Regardless, unless I come up with some equally exciting alternatives, Christmas morning may be a disappointment. At least little Belle will be easy to please. All I need for her is a year's supply of raisins.Fortunately I have a lot to hand. A mountain in fact. This is the one occasion in the year that I embrace dried fruit wholeheartedly and make a traditional fruit cake. When I was younger, Christmas cake was just a vehicle for marzipan and icing, but this recipe is fantastic. It's super moist, really delicious and it's also gluten- and dairy-free. People with food allergies or intolerances often have to miss out on traditional Christmas treats so this is a great way to include everyone in the festivities.It's easy to make but labour-intensive in terms of time. I have learnt from past experience not to start this process in the evening! Enjoy.
