Fairmont announces overhaul of restaurants

Restaurant revamp: Fairmont Southampton is planning big changes for its dining areas

The Fairmont Southampton resort is to invest more than $1 million in an overhaul of its restaurants.

Over the next two months, the Jasmine Cocktail Bar and Lounge will be revamped and given a new menu, while the Gastropub in the Newport Room and Bacci at the Turtle Hill Golf Club will both be closed down and replaced.

Mediterra, a new Mediterranean restaurant, will open in the Newport Room location, while the Boundary Sports Bar and Grille, described as an upscale American sports bar, will replace Bacci.

The hotel said today that the project will be completed in three phases, starting with the refurbishment of Jasmine Lounge.

The hotel lobby lounge will relocate to a beautiful pop-up space in the Poinciana Foyer tomorrow, and will reopen next Friday with an updated look and feel.

The new menu will feature the restaurant’s most popular items in addition to several new and exciting dishes.

In early October, the second phase of the overhaul will create Mediterra.

“In an effort to ensure a truly authentic experience, a team of four Fairmont Southampton employees embarked on a two-week culinary immersion through the Mediterranean region of Europe earlier this year,” the hotel stated.

“Two young Bermudian colleagues, second cook Nicole Clarke and server Ravone Butterfield, joined the resort’s executive chef and assistant director of food and beverage, to source innovative dishes in Spain, Italy and Monaco.

“Dishes will include shared plates of fresh seafood, paella, and more.”

Bacci’s last day of operation will be October 1 and the Boundary Sports Bar will open in early November.

The new venue will offer live TV broadcasting of major international sports events.

The hotel will be working with design firm Wimberly Interiors to bring the new concepts to life.

Wimberly is part of WATG, one of the world’s leading integrated design firms and ranked as second in the world among hotel architectural firms.

More information on all new restaurant concepts, including opening hours and menus, will be released closer to each opening date.
