Crispy crêpe street food is sweet or savoury

A new food truck has opened in Hamilton, offering street food inspired by Malaysia, but made with a Bermudian twist.

Michael Pantry has opened Crispy’s Sweet and Savoury, serving a crispy crêpe with fillings ranging from peaches and cream to pulled pork.

Situated on the corner of Church and Wesley Streets, he is the sixth mobile food wagon to be licensed by the City.

The others are JorJay’s, DeGraff’s, Ashley’s Lemonade, Snowy’s and Trini Spice.

“Mine is one of a kind in Bermuda, the only real street food place of its type,” said Mr Pantry. “We do a thing called crispys, which are crispy crêpes.

“I have a range of fillings, from savoury to sweet. We have a dessert menu for quick, on-the-go treats like crème brûlée and cheesecake. I have peaches and cream. I have a whole bunch of tasty, quick items.

“Then, on the savoury side, I have pulled pork and Asian-inspired options. I have one that has brisket with battered onion rings and special sauce made with horseradish. That is my bestseller, the Big Tex.” He also has vegetarian options.

Mr Pantry found inspiration for his business when he gave up his job in data infrastructure to be a house husband in Kuala Lumpur, Malaysia, where his wife, Nicole, worked as an educator at an international school.

“The street food scene there is just banging. You have got everything you could ever want, all types. Asian food, western food, everything.

“In Bermuda, we don’t really have any sort of street food scene at all, so coming back from there, I saw the void and wanted to fill it.

“Over there, they do it a lot differently from the way I’m doing it; they have a lot more traditional fillings, but I am fusing it with western ideas. I am fusing the two scenes and bringing a street food vibe to Bermuda.”

Mr Pantry, who used to run the food business Char Baby BBQ as a side business, added: “When I went over to Kuala Lumpur, I sort of made the promise that I would not go back into data infrastructure.

“I took the two years that I was a house husband to soak in all the smells, sights and colours of the food scene in Asia.”

On the switch from data infrastructure to a food wagon, he said: “I have always had a passion for food. I saw the opportunity and figured I was getting too old not to try. I took the chance and went for it.”

Street food, said Mr Pantry, is quick and eaten on the go.

“My ethos is low footprint. I don’t have takeaway containers, I don’t have plastic forks, you get your crispy in a little paper envelope and that’s it.

“The biggest hurdle for me is getting people to understand street food and the whole concept of eating on the go, on the street.

“I get a lot of weird looks when I don’t offer takeaway containers or a plastic bag. It is a different culture, we are just not used to it in Bermuda.”
