"I will have the ability to work all over the world."

Daamian Simmons says most people would be surprised by the fact that as a 20-year-old he is working in a responsible position in an industry filled with international talent.

"My job entails preparing breakfast and lunch service at Harley's Restaurant. This includes setting up the breakfast buffet with a selection of hot and cold items and keeping it replenished as needed. In addition, I am responsible for preparing a-la-carte items from the lunch menu."

To be a commis chef, Mr. Simmons says you needs a degree or diploma in culinary arts or in food and beverage. However, he also says the greatest requirement for a commis chef, without question, is the ability to multi-task.

"I chose the culinary arts field because I really enjoy cooking and it is a chance to be creative with whatever I am making.

"What I enjoy most about the job is that I learn new things every day, on my own and from my peers. With Fairmont and in the culinary arts, I will have the ability to work all over the world throughout my career."

As for the high school subjects he finds most useful Mr. Simmons admits it is his turn to be surprised: "I use my Math skills quite frequently."
