Bermuda Pie Company has found a new home — and it is a long way from where it started.

The restaurant opened at 55 Court Street last week, six months after the floor collapsed at Wellington Oval, forcing it to close.

Owner Kris Furbert has faith that his East End customers will find their way to the new spot.

“St George's will always hold a spot in my heart. I was born and raised in St George's, which is actually why I wanted to start there. People know me; a lot of them are used to the food that our family make. We had a great following down there. I’m hoping that they follow us to Hamilton — or come visit when they get a chance.”

A central location offers more foot traffic. Bermuda Pie Company is on the same block as Soul Food, not far from Hamilton Police Station.

“We’ve been kind of shut down since around October when the floor collapsed in our building. We didn't really have a choice. The building was unsafe, it was unfit to use. So I’ve just been in the process of clearing out, which is a task in itself, and also just looking for somewhere new to operate,” he said.

“Imagine one day you're operating, and then the next you come into a building that’s collapsed to the point where you have to shut it down. That sort of pulls a rough Monday, right?”

From that point on, there was no real income; only expenses. Mr Furbert expressed his gratitude for his staff, some of whom he had to lay off.

“So this changed not just my life, but a lot of people's lives over the last six months. During that time, it was basically just searching for a new location, which was a little bit tough. Just because it’s a kitchen doesn't mean that it's going to work for me. I needed to have the space for certain equipment and there aren’t many spaces like that.”

Through a partnership with entrepreneur Elmore Warren, he was able to find the Court Street location, which offered the right layout and facilities.

“With no real income coming in, things got a little bleak. There was a time around December where it kind of crossed my mind — just briefly — that we might have to pull the plug on this but thankfully, the Bermuda Economic Development Corporation was able to assist. With the backing of the BEDC, we were able to push through the last few months, and they're basically the main reason why we're still here today. They were very helpful all around. Without that support from them, I don’t think we’d be here today.”

The restaurant will serve many of the favourites customers came to love in St George’s — a rotating selection of freshly made pies, as well as Bermuda Pie Company’s award-winning burgers. There will also be chicken wings and “house-made sauces”, fish cakes, and “a few sides”.

“We simplified the menu a little bit. We do quite a few things well and that's what we're just going to focus on serving,” Mr Furbert said.

Bermuda Pie Company features a small seating area but will primarily offer food to go. Its new location also opens the door to catering for nearby businesses. Mr Furbert is banking on his signature pastry to help carry the new space.

“It just melts in your mouth. It's just the right combo of savoury and sweet and that's what people talk about,” he said. “The insides are good as well — we put so much meat in our pies that, once, somebody complained there was too much meat.”

He said the e-mails, calls and messages from customers helped keep him going during the rough patch.

“People asking us when are we coming back — it showed how much we’ve been missed. I've had people stop me on the street, I’ll bump into people and they’re like, ‘We haven't been able to find things like yours — your fish or your burgers’.

“People just straight up tell me, ‘We miss you.’ I actually love that. I feel touched because I put in a lot of work to get this off the ground, to make this a thing and it's just really nice to hear that you've been missed.”

Still, reopening after months away is not without a bit of pressure.

“We’re in the city now. There’s going to be more traffic, more people — and a lot of new people. I think we’re going to be received quite well. I wouldn’t say it’s a big concern but, in the back of my mind, we haven’t done this for six months,” he said.

“Luckily, I've structured my company in a way that we have a lot of systems in place. Our recipes that we use — I’m very strict with them — so our food is going to be the same great quality every time you come here. I built my restaurant off of that consistency.”
