New takeout restaurant offers wings in wild flavours

Dakia O’Brien’s new takeout restaurant Wild Wing Wednesday will celebrate its grand opening tomorrow when Member of Parliament for the area Michael Weeks will cut the ribbon and officially launch an already successful and popular business, in an event which will be covered by Irie FM98.3 radio station.

Her business Dae N Night Catering had grown in less than a year, during which Ms O’Brien developed a loyal following of clientele who have had her fried chicken wings delivered to their Hamilton work places on Wednesdays — hence the name of the new business. Now, customers can enjoy the 17 different flavours of wings she has created — including the new sweet pumpkin patch, especially for Thanksgiving — from her new Parson’s Road premises from Tuesday through Saturday.

At the grand opening, there will be a wing-eating competition which is slated for 10.30am, along with prizes and tattoos for the children.

The young chef had been working from the The Flame Take Out in the North Shore in Devonshire during the past year, and also at Blue Waters Anglers Club on East Broadway. While she only delivered on Wednesdays, she found she was fielding calls all week from potential customers. “So I knew this was something I needed to expand, and I kept my eyes and ears open,” she said.

When she found the Parson’s Road premises, she said: “I did my research, and found out who to talk to. I got the property in August — I worked and saved up and got it open!”

While the Wild Wing Wednesday building was being renovated, she said: “Every time I walked in, I felt it wasn’t ready. So I set a date — November 4, which is my daughter’s birthday. And we opened! It’s been three weeks, and we’ve had a great start.”

Ms O’Brien has two additional staff members working with her at the take out restaurant.

She says her old delivery customers are supporting her. “And, I am seeing a lot of new faces.”

They are being drawn by chicken wings in flavours as diverse as piña colada, to the traditional honey barbecue. “There are people who don’t want to think outside the box,” she said. However, the creator of the multiple chicken wing varieties said Caribbean Breeze and Special Sauce are favourites.

In addition, she has boneless wings on the Wild Wing Wednesday menu, along with a curried chicken mango salad. There’s also french fries and coleslaw.

“For the grand opening we are introducing fish, hoppin’ John and macaroni and cheese — I want to bring back some of the old Bermudian favourites.”

She said they may reintroduce deliveries in January, and are also hoping to get a licence to sell beer and wine.

Wild Wing Wednesday also can make up chicken wing platters for parties.

Ms O’Brien explained she had earned her degree in the culinary arts at Johnson & Wales University, and returned home to intern at the now-closed Greg’s Steakhouse. After that, she had worked in the kitchens of some of Bermuda’s top restaurants including Port O Call.

High standards are the priority for the chef. That was proved when she won the Corporation of Hamilton’s chef competition In March.

But, working for established restaurants meant “there wasn’t much room for creativity”, she said. “My mind was going and going! So I felt it was time to go and do something on my own.”
