Marcus’ names new executive chef
Top restaurant Marcus’ has a new executive chef.
Herb Wilson, who has an international background in the kitchen, joins the Hamilton Princess restaurant from Red Ginger, a southeast Asian restaurant in Florida’s South Beach.
Allan Federer, general manager of the Hamilton Princess, said: “Chef Wilson is a well-regarded chef that has worked at some of the top restaurants in New York City and around the world and we are excited to have him join Marcus Samuelsson and the fabulous team at Marcus’.
“The menu at Marcus’ is international and creative. Chef Wilson’s experience is perfectly aligned with the fun vibe and cuisine at the restaurant.”
Mr Wilson, originally from New York, previously worked as executive chef at Sushi Sama at the Palazzo Hotel in Las Vegas and at the Soho Grand and Tribeca Grand Hotels in New York, where three restaurants overseen by him won two stars from three different New York Times reviewers.
Mr Wilson also used his Jamaican heritage to open Banbou, an upmarket Caribbean-style restaurant in New York that received national attention.
He is a graduate of the New York City Technical College and early in his career worked with the late Patrick Clark, the star chef at the Tavern on the Green and with Larry Forgione of An American Place.
He has also worked in France with stints at top restaurants, including three Michelin starred establishments.
