How to make afternoon tea just perfect
Recipes in `Bermuda's Tea Time Treats - for coffee lovers too' include cookies, cakes, muffins, scones, jams and relishes, and even dog biscuits!
All (except the dog biscuits) are designed to be perfect accompaniments to tea and coffee, and many have their origins in countries around the world.
A special chapter, entitled `My Lords and Ladies,' contains contributed recipes from the titled and VIPs now or recently among us, including the outgoing Governor's wife, Mrs. Jennifer Masefield, Lady Swan, Sir Richard Gorham and Lady Spurling. Here is a sampling:
DOUBLE LEMON SHORTBREAD

Ingredients:
2 lemons
3-4 cups cake flour
1? cups confectioner's sugar
1? cups butter
4 eggs
1 cup sugar
1 teaspoon baking powderBaking temperature: 350 degrees F.
Secret touch: Baking times are approximate. Keep an eye on them to prevent browning too much. For perfect taste always use butter, never margarine.
Method: 1. Preheat oven; lightly grease pans. 2. Grate 1? lemon peel.
3. In a mixing bowl, combine 3 cups flour with _ cup confectioner's sugar. Cut in butter with a pastry blender or knife. Knead together. 4. Divide mixture equally into two cake pans and pat into shape with hand. Bake 30-40 minutes. Cool for 20 minutes.
5. In a mixing bowl, beat eggs then add sugar, baking powder, cup lemon juice, 1? teaspoons lemon peel. Pour over cooked shortbread. 6. Bake a further 30-35 minutes. Cool in pans for 5 minutes.
7. While cooking mix ? cup confectioner's sugar with 1 tablespoon lemon juice and drizzle over shortbread. Cut and store. Each shortbread makes 12 slices.
VICTORIA SANDWICH

Ingredients:
_ cup butter or margarine
_ cup sugar
3 large eggs (beaten)
1? cups all purpose flour
1? teaspoons baking powder
Jam
Confectioner's sugar
Baking temperature: 350 degrees F
Secret touch: To prevent the cooling rack indenting cake top, place a folded tea cloth on palm of one hand and turn cake onto it. Turn cake topside up with cloth underneath before placing on rack. lb. chopped dates
1? cups vinegar
2 teaspoons ginger (green or ground)
? cup raisins
1 teaspoon curry powder
2 cups water
1 cup sugar
Secret touch: To decorate for a gift: Take a scrap of fabric and with pinking shears cut a circle one inch larger than top of bottle. Place on top of bottle and secure with elastic band. Tie around a coloured ribbon.
