Healthy lunchbox recipes
lunch -- which doesn't mean it has to taste bad! Here are some healthy recipes which also taste great.
Sandwich Fillings and Spreads Egg Salad 3 hard-cooked eggs 2 Tbsp mayonnaise salt and pepper to taste Homemade Cheese Spread 1 cup cream cheese 1 cup grated Chedder cheese Pineapple Cheese Spread 1 cup cream cheese 1 cup grated cream cheese Tuna or Salmon Salad 7 1 oz can tuna or salmon 4 tbsp mayonnaise 2 tbsp toasted sunflower seeds (optional) 2 tsp lemon juice PEANUT BUTTER OATMEAL COOKIES 1 cup margarine 3 cup sugar 3 cup brown sugar 1 tsp. vanilla extract 1 cup creamy peanut butter 2 eggs, beaten 1 1 cups flour 1 cup bran 3 cup rolled oats 2 tsp, baking soda PREHEAT oven to 350 degrees. Melt margarine. Combine margarine with sugars, vanilla, peanut butter, and eggs. Beat until smooth.
Add flour, bran, oats, and baking soda. Blend until smooth. Drop batter by teaspoons onto ungreased cookie sheet. Bake approximately 15 minutes until golden brown.
CHICKEN NUGGETS CHEZ GOOR 4 boned and skinned chicken breast halves 2 tbsp. olive oil 2 cloves garlic, minced 1 tsp. pepper 1 cup finely ground bread crumbs, made for 2-3 slices 1 tsp. cayenne pepper 1 1 tsp. honey 2 tbsp. Dijon mustard PREHEAT oven to 475 degrees F. Cut each chicken breast half into 8 pieces. Mix oil, garlic, and pepper with chicken pieces and marinate about 30 minutes.
Combine bread crumbs and cayenne pepper and place on plate.
Roll chicken pieces in bread crumbs and place on large cookie sheet in a single layer. Bake for about 15 minutes until browned and cooked through. For extra browning, broil for a few more minutes. Combine honey and mustard. Dip nuggets into honey-mustard sauce. Serves 4.
