Tourism on the look-out for chefs

culinary community to sponsor a competition to seek out the best chefs, pastry chef and bartender.

Those who are chosen as the "best of the best'' will be part of a team to compete in the Taste of the Caribbean cook-off in Puerto Rico in September.

The Caribbean contest, which is in its fourth year, has drawn international attention from the industry and consumer food and wine press.

It is organised by the Caribbean Culinary Federation and sanctioned and judged by the American Culinary Federation.

A committee comprising local professionals and tourism department personnel is co-ordinating the Bermuda competition which will take place at the Bermuda College on July 11.

Tourism Minister David Dodwell said: "Here is a fine example of the Department of Tourism working as a facilitator and getting the private sector involved to start a project moving.

"The spirit of the local competition is to raise the profile of the profession in the community, to interest more young adults in the hospitality industry as a career choice, and of course to bring glory to Bermuda by having a winning team.'' He added: "It will also have a positive impact on the dining experience we offer our visitors enhancing creativity and standards.'' Mr. Dodwell said there was incredible talent in Bermuda and "we're looking for the best of the best to be part of a team of six -- four chefs, one pastry chef, and one bartender.

"Jim Furey, the co-ordinator in the Caribbean, has been after us for some time to be part of this high profile event. I think we belong there. I think we can win.'' He also said he hoped the whole community would be involved. "I hope the whole community gets behind the effort, we need moral and financial support.

"The local cook-off should be an exciting event and hopefully in September we can all be on hand to welcome back our winners.'' The local competition is open to all cooking and bartending professionals.

Space is limited to 30 chefs, 15 pastry chefs, and 20 bartenders who will complete for one of the six places on the team that will be sent to Puerto Rico.

Winners will be required to train as a team, and several practice dinners will be open to the public. Deadline for applications is May 15. Forms can be obtained from the Department of Tourism and The Bermuda College.
