Chef creates impressive menu

improved the already upstanding quality of food to coincide with the opening of its new seaside restaurant and bar, Caliban's. Head chef Mr. John-Paul Flood said he tried to create a unique menu with a wide selection of dishes, which he may change with the seasons depending on customer response.

Originally from Ireland, Mr. Flood worked in Curacao in the Netherland Antilles for 18 months before coming to Bermuda in 1992. He spent two years at Sonesta Beach Hotel before moving to Ariel Sands late last summer. Working at the beach club in Devonshire is different from working in a large hotel, he said. "It's more personalised and you get the opportunity to meet and get to know the guests.'' The cottage colony's recent renovations included a revamp of the kitchen, which has made a remarkable difference, noted Mr. Flood. "We had brand new service equipment installed which makes for more practical and professional working conditions.'' There are six chefs working in the kitchen at present, but Mr. Flood said he hopes to have eight shortly as he anticipates a busy season. "I think we will be very busy,'' he said. "We now have a full a la carte menu with specials everyday. And we make all of our own pastries,'' he noted, adding that the chefs take care to prepare heart-healthy foods. "We use olive oil rather than vegetable oil and we try to make the food rich in taste, yet light. "We also try to accommodate any special requests.'' Restaurant manager and maitre'd Mr. Georgie Belloquet said he wants Caliban's to be the best in Bermuda. "I've been working here for two years and have seen a lot of changes,'' he said. "We've changed the menu to accommodate all kinds of people and enhanced the food with flair, placing a lot of emphasis on presentation.'' Mr. Belloquet, who was the restaurant manager at Glencoe for 12 years, said the new menu is already a hit with guests and he has already seen more locals coming in to sample the fare.

"We're known for a relaxed atmosphere and personal service. The bottom line is we cater to customer needs. "The new dining room looks beautiful. And we're going to have outside entertainment.
