The Porch restaurant aims to give people good quality food for an inexpensive price.
"Why pay an arm and a leg when you just want to get out and have a good meal,'' is what head chef Ms Christine Bertha said.
"Locals tend to get ignored, and our aim is the local market.'' She added that there was a split dining room which consists of The Porch restaurant, which is on the balcony, and the 93 Front Street Grill, in the back.
"It is important that people can go out and not have to pay high prices for good food,'' Ms Bertha said "Other restaurants that have high prices cause people to not want to go out for dinner.'' Ms Bertha said she believes that if prices are kept reasonable and the food is of good quality, The Porch would have a good shot at the local market.
And she added that the presentation in both restaurants was very important.
"The food has to look good or I'm unhappy,'' she said.
In the Grill, diners are more pampered because it is a more intimate and elegant setting. The Porch restaurant's atmosphere is more open and free.
However, she said: "The Grill does not dent you're wallet as other restaurants do''.
The Porch dishes are made with fresh, local ingredients. Fresh meats are flown in.
"Nothing comes from the can. All our sauces, and stocks are made right in the kitchen,'' said Ms Bertha.
She also said to ensure that customers do not get bored with the menu in either restaurant, menus are changed three or four times a year.
"If we are shooting for the local market, we don't want to exhaust the lunch and dinner menus,'' she explained, adding that vegetarian dishes were also prepared.
"I believe that the vegetarian market is ignored, and vegetarians tend to ignore their dietary needs. They need a balanced meal.'' And that's just what The Grill and The Porch give them, with their array of vegetarian plates that would make even those who were not vegetarian take a bite.
"My aim is to keep changing the recipes,'' Ms Bertha said. "We don't want to serve the same food, but we do have to have the basics such as hamburgers and fish.'' Working along with Ms Bertha are two other chefs Mr. Terry Downes and Mr.
Michael Turano.
"We have a great working relationship,'' she said. "Everyone works together as a team, including other staff members.
"We create a happy and good atmosphere and that in turn spreads itself out to the customers.'' She added: "We want people to come here because it is a relaxing place to be and there are no big bands pounding.
"When people come here looking for night life I ask them when was the last time they sat down and had a quiet drink and real conversation.'' The Porch restaurant offers both intimate dining and pub food. For instance, you can eat on the Porch and have fish n'chips or you can eat in the Grill and try our Salmon.
"Either way you're going to be full and you're going to have money left in you're pocket,'' promised Ms Bertha.
